Week Four Menu - Sept 9th

Sweet and Sour Meatballs with Rice
Sure to be a kid favorite. Large meatballs that cook in a homemade sweet and sour sauce. Serves with rice.
Lemon Herbed Chicken
These marinated boneless skinless chicken breasts are ready for the grill. The lemons keep this meat so tender and all the juices locked in
Stuffed Pasta Shells
These jumbo pasta shells are loaded with 3 kinds of cheese and topped with a wonderful marinara sauce. This meatless dinner is always a crowd pleaser.
Chimichungas
This is such a quick meal for those nights when everyone is running in a different direction. Flour tortilla are stuffed with slow cooked Kalua Pork and cheese. You can heat these individually or serve them up altogether.
Chicken Cordon Blue Bake
Chunks of ham and chicken are topped with swiss and cheddar cheese and baked with a sauce and bread stuffing mix over the top.

Week Three Menu Sept 2nd


Blue Cheese Burgers

These ground beef burgers are a fun change from the regular hamburger. Bits of spices and bleu cheese crumbles fancy up this American standard. {Comes with buns}

Sticky Coconut Chicken

The glaze is really sticky and you really can not taste any coconut. These chicken thighs are marinated in a coconut milk marinade and then grilled on the BBQ. There is a sweet Asian glaze that goes over the top when they are all finished. Think sticky teriyaki chicken only better. {Comes with rice}

Pasta Pesto
A simple pasta dish that will have you coming back for seconds. Penne pasta tossed with a traditional basil pesto sauce with bits of bacon, mushrooms and peas then topped with parmesan.

Burrrito Stack

This was a recipe that my kids found in the Family Fun magazine and it has been a hit every time that we have made it. Layers of flour tortillas, shredded beef, black beans, cheese, salsa and Mexican spices make for a great Mexican style lasagna.

Lemonade Chicken

Boneless skinless chicken breasts marinade in a homemade lemonade concentrate sauce. Take these out an grill them for tangy but slightly sweet delicious meal.

Week Two Menu August 26th

Chicken Piccata
Boneless skinless chicken breasts that are very lightly coated and served with a lemon sauce with capers. {The capers are easy to pick out for those who may not like them. The sauce does contain a splash of white cooking wine}
Barbecue Beef Sandwiches
This is an OLD family recipe with a "from scratch" BBQ smoky BBQ sauce. This boneless chuck roast slow cooks all day for a scrumptious flavor. Serve on the included hamburger buns. The leftovers make for great Quesadillas the next day.
Homemade Mac and Cheese
Not the bright orange stuff. This creamy version is sure to be a kids favorite. Topped with breadcrumbs to dress it up a little for the adults who are eating it too.
Chicken Enchiladas
An old standby in our house. Shredded chicken and cheese are wrapped up in flour tortillas and covered in a diced chili cream sauce.
Butterflied Pork Loin
A pork loin roast that has been butterflied open and stuffed with garlic, breadcrumbs, rosemary and other spices. It is tied back up and ready to roast in the oven.

Week One Menu August 19th

Café Rio Pork
This pork loin is slow cooked for hours in the crockpot and ends up with a sweet sauce with a little bit of a kick.
Penne Rustica
This is from the popular dish at Macaroni Grill. Penne pasta with grilled chicken, bacon, and diced red bell peppers topped with a garlic parmesan cream sauce
Fast Fire Flank Steak
This flank steak is so fast to cook on the grill {fire}. This is not a spicy dish but has a yummy garlic Asian sauce that it marinades in.

Getting Started

I wanted to let you know about a service that I am going to be offering to my family and friends {and friends of friends}.

I talk to people all the time about meal planning and what they are having for dinner at their house. I realize that all of us get stuck in a rut making the same things over and over. Many of us are running in so many directions that we barely have time to run through the drive thru for dinner.

Many of you know that I love to cook. I love to plan the food. I like to shop for food. I like to make the food and it goes without saying that I like to eat the food. As the school year starts up and so does soccer, karate, piano, etc. I know that everyone gets busy. I am looking for families that would like some help getting dinner on the table.

I am putting together a menu { 5 meals} that will be changing on a weekly basis. These meals come from family favorites, friend's favorites, my favorite food blogs and wherever I can find super dishes. I will prepare your meals,package up the meals and have them ready to be cooked at your house. I will give you all of the cooking instructions. These meals can go into your fridge and/or freezer to be used throughout the week.

These meals are available for pick up or can be delivered to your door for a small fee. There is no long term commitment. You can order when you like. These are meals that I feed my family so they are kid friendly but very tasty for adult palate.
